En este artículo se identifican actividades generadoras de valor en cadenas agroindustriales, a partir de una revisión sistemática de literatura en la base de datos Scopus, combinando términos asociados a la generación de valor en este tipo de cadenas. La búsqueda arrojó más de dos mil documentos, los cuales fueron reducidos por medio de criterios de exclusión e inclusión preestablecidos, como fecha e idioma. Como resultado de la aplicación de estos criterios, se seleccionaron setenta y ocho artículos para análisis, permitiendo identificar treinta actividades generadoras de valor en cadenas agroindustriales. Los hallazgos muestran que las actividades asociadas a las habilidades operacionales y a la integración de la agroindustria son las más relevantes; sin embargo, en los últimos años se ha otorgado valor a las actividades asociadas al marketing e innovación, permitiendo visibilizar nuevas estrategias para el empleo de recursos, repercutiendo directamente en el aumento de la competitividad de las cadenas agroindustriales.

Nathaly Albarracín Gutiérrez, es Ingeniera Industrial de la Universidad Industrial de Santander, beneficiaria de la convocatoria “Formación de capital humano de alto nivel para el departamento de Santander en la Universidad Industrial de Santander” proyecto del Sistema General de Regalias, por el cual se encuentra realizando estudios de maestría en el programa de Ingeniería Industrial en la Universidad Industrial de Santander, asociada como investigadora del grupo Finance & Management. Las áreas de investigación de la ingeniera están relacionadas con emprendimiento, modelos de negocios generación de valor en cadenas agroindustriales, así como pedagogía para la enseñanza de estos temas. Es coautora de 1 de una ponencia en evento científico internacional. Anteriormente, se ha desempeñado como coinvestigadora en el proyecto “Desarrollo de una tecnología para la producción de bioceras que fomente el biocomercio en el departamento de Santander” financiada por el Sistema General de Regalías.

Aura Cecilia Pedraza Avella es doctora en Ciencias Económicas de la Universidad Nacional de Colombia, magíster en Economía de la Universidad de los Andes e ingeniera industrial de la Universidad Industrial de Santander. Es profesora asociada de la Escuela de Estudios Industriales y Empresariales de la Universidad Industrial de Santander, e investigadora del grupo Finance & Management. Las áreas de investigación de la profesora Pedraza se concentran en los procesos de emprendimiento y generación de negocios, así como también en economía laboral. Es coautora de más de 22 artículos científicos y 2 capítulos de libro; además, ha participado como ponente en más de 50 eventos científicos nacionales e internacionales. Actualmente se desempeña como Jefe - Unidad de Información y Análisis Estadístico (UIAES) de la Universidad Industrial de Santander y es investigadora principal del Programa “Nueva generación de películas biopoliméricas para empaques a partir de biomasa residual de cultivos tropicales” financiado por Minciencias y es coinvestigadora en los proyectos “Desarrollo de un piloto para la remoción de cadmio de granos de Cacao en el departamento de Santander”, “Desarrollo de un piloto para la obtención de edulcorantes líquidos a partir de mucílago de cacao en el Departamento de Santander” y “Desarrollo de una tecnología para la producción de bioceras que fomente el biocomercio en el departamento de Santander” del sistema general de regalías.

Ingeniero químico con doctorado en química, bioquímica y ciencia de alimentos. Con alta capacidad para estructurar y dirigir proyectos de investigación enfocados en la transformación y adición de valor agregado a materias primas de fuente agrícola, usando aproximaciones biotecnológicas. Entre las materias primas priorizadas en las línea de trabajo se encuentra el cacao en donde he participado y me encuentro participando en proyectos que propenden dar valor agregado a la cadena cacao - chocolate.
